Mutta Choru & Malabar Kozhi curry















For all Malabaris like me this granny has always been the greatest inspiration....Mrs Ummi Abdulla's cook books have almost become the Bible of Malabar Muslim cooking....though I still do not have one,I have grown up reading her recipes in the popular Malayalam magazines and I have seen my mother cutting out and pasting here recipes into her recipe collections...She is perhaps the best selling author globally to have the best selling cook books on Malabar cuisine.














I felt sorry watching my husband's Financial Advisor taking the brunt of my Malabar Kozhi curry yesterday with his nose running and the tongue burning...I think it was a bit too much for his English palate...though he told me that the food was lovely and that he enjoyed it...of course, he seemed to enjoy it...he said he liked Indian food but could not afford to eat it regularly....and there was Gina,whom I met at Llandrindodwells, a sweet and bubbly lady, who was very much interested to make chappathis and learn more about Indian food and try a few from my blog...I was really surprised to see many of the Indian restaurants here frequented by the natives...But unfortunately a majority of the so called'Indian' restaurants are far from Indian in taste.....A chicken curry, a lamb curry and a fish curry taste the same...same sauce and the pieces popped in to it as per the order...whereas the whole beauty of Indian cooking is in the pieces really being cooked in the gravy and thus absorbing the whole masala...Malabar Kozhi curry is my favourite chicken curry which my mom often made at home...A spicy curry which goes with pathiri,chappathi,naans and rice varieties. Mutta choru, again is from my mom and they go hand in hand with this curry. So here's my recipe for both:

Mutta Choru:
Ingredients:
Basmati Rice-2 cups
Eggs-5
Coconut milk-1 cup
Turmeric powder-1 pinch
Pepper powder-1 tsp
Red chilli powder-1 tsp
Green chillies-2(chopped fine)
Ghee-1 tbsp
Oil-1 tbsp
Garam Masala-1 tsp
Curry leaves-1 sprig
Parsley-as required
Salt-as required
Boiled Water-3 cup

Method

Soak the washed rice for 5 minutes.Now heat 1 tbsp ghee in a deep bottomed vessel and roast the rice till the grains become slightly soft on biting.Now add boiled water and break into it 2 eggs completely,(boil the remaining eggs and keep ready) and mix well.When the rice is half cooked add coconut milk,pepper powder and salt and cook it till it is done.Now heat oil in a wok.Add curry leaves,green chillies,red chilli powder,turmeric and garam masala.Reduce the flame to a simmer(or else chilli powder will get burnt).Saute it for a minute.Now add the boiled eggs, cut into half,to this masala.Roast it till it becomes golden.Now add these eggs along with the masala to it.Mix well.You may separate out the eggs and add them after mixing the rice well.Finally garnished with fresh chopped parsley and serve it hot with any spicy curry of your choice.

Malabar Kozhi curry












Method:

Chicken-300g
Red chilli powder-1 1/4 tsp
Turmeric powder-1/4 tsp
Onion-2 large-chopped fine
Green chilli-4 or 5
Garlic-9 cloves
Ginger-20g
Pepper powder-1 tsp
Garam masala-1 1/2 tsp(cloves,fennelseed,cardamom,nutmeg,cardamom,cinnamon)
Coconut milk-1 cup(thick)
Curry leaves-2 sprigs
Oil-as required
Salt-as required

Method:

Marinate the chicken with half the quantity red chilli powder,turmeric powder and salt for 10 minutes.Pressure cook it with 2 or 3 garlic pods pounded(if u r adding potatoes,cook it along with chicken) and added to it for 2 or 3 whistles.(I microwave it at high for 8minutes).Now Heat oil in a wok.Fry the cooked chicken pieces till they are golden brown.Remove it and keep it aside.Now in the same oil sautecurry leaves,onion,ginger-garlic-greenchilli paste(coarse paste) till onions turn golden brown.Add garam masala,the remaining red chilli powder and mix well.Cook further for a couple of minutes. Now add the chicken pieces and cook for a couple of minutes.Add the coconut milk and mix the gravy well and cook for another 4 minutes.Serve it hot with rice/pathiri/porota/naan/chappathi/Puttu.

    Hi Indianadoc, this is Rg...just now saw this egg rice and chicken curry recipe. the curry looks so delicious...I wish I could taste it right away. Your malabar chicken curry and Shaheen's chicken curry sounds slightly different....I tried hers and now I would like to try yours too along with your biryani recipe, next week for my husband's b'day. No coriander powder in chicken curry is something new to me and Garam masala that you've mentioned is in whole or powdered form? Please let me know. thanks for sharing such wonderful mouth watering recipes....:))Keep it coming!

    >thanx Rg once again...well we malabaris have umpteen varieties of making non veg and egg curries...somehow nonveg cooking is quite predominant in this part...well, regarding the garam masala, it is powdered.I use a mixture of powdered cinnamon,cloves,nutmeg,mace,cardamom(a pinch each) and fennel powder, a little more than a pinch.I like the flavour of star anise,so I add 2 star anise and 2 bay leaves as well.Well, it is all absolutely personal choice.You may increase or decrease the ratio of the flavours as u like it...

    I dont know dear Indianadoc,I visit your blog on a daily basis now.To tell you frankly you are the onlyone from whom i got authentic malabar recipies which I cant resist.Your koyi biriyani have brought back the "CHEF" in me..Today was lucky to taste your kozhi curry.I hope Indianadoc,you will be missing mom so very much..I adore her for arousing the cook in you..(by the way your words are spicy too..)What happd to 'Eastern issue ?
