Left over Rice Recipe-Potato Rice


















There has been a lot of occasions when I have scratched my head as to how to transform the left over food in the fridge....Many a times my idli and appam has become stunning upmas and I have enjoyed the drama of my husband relishing it to the last morsel and then at last trying to figure out the original! I think I learnt the trick of the trade from my Amma, when my father and brother sometimes refused to eat a second time the preparation of the day...saddistic variety mongers!So she put wool on their eyes by transforming it into some really un heard of recipes! I had some steamed rice left over in the fridge... and some french fries too.A combination of the two??...Hmmm...turned out to be too good....

Ingredients

Steamed Basmati rice-2 cups(Refrigerated)
French Fry-150g(potato fry)
Spring Onion-4 shoots(cut into pieces)
Ghee-1 1/2 tbsp
Star Ani seed-3
Bay leaves-3
Cardamom powder-a pinch
Fennel seed powder-a pinch
Cinnamon powder-a pinch
Cloves powder-a pinch
Nutmeg powder-a pinch
Pepper powder-1tsp
Salt-as required

Method

Heat Ghee in a wok. Add Ani seed, bay leaves, all the powders and saute for 2 minutes.Add Spring onion&salt.Saute for a minute.Add the french fry .Saute it for a couple of minutes. Finally add the cooked rice and mix everything well and cook it for another 2 minutes. Serve hot with any Raita.

I do that sometimes, make fried rice with left over rice. I never had a situation when French fries were ever left-over..LOL
