French fries


It was quite interesting to know that there are many countries which claim the French Fries as their original product more than France. The argument goes on...but the US giants Mcdonalds,KFC and Burger King have really globalised this very yummy snack...Be it French, Belgian,Spanish,American or English, the world has fallen flat over the French fries and is indeed a classic combo with meat or fish...

Well,'To French' is a verb and it means to cut in thin lengthwise strips before cooking. French fries have plenty of variant forms, "thick-cut","shoestring", "curly","waffle-cut"etc.,.Sometimes they are coated with breading and spices and sometimes the skin is not removed and are eaten as "steak fries"; there are oven cooked French fries as well.

Here is a basic French fry recipe. You may season it or change it according to your palatal preferences...Want to Indianise? Perfect....add any of the seasoning masalas...like for instance the chaat masala...or simple'uppu kaaram'(salt n red chilli powder)...anything goes well with it. To french the fries in a fast food style you have the potato slicers available in the market...or else dont worry, just a little patience is enough...we can slice it in our usual syle.


Ingredients

4 large potatoes-peeled and Frenched.
salt-as required
Water-as required
oil for deep frying


Method

French the potatoes into strips and leave it in water( to avoid discoloration.Boil salted water in a large saucepan,just enough to cover the potatoes. When the water comes to a boil, put the potatoes in it & and switch off the heat and leave it for 5 minutes.
Transfer the potatoes into a colander and let the water drain off completely, for about 15 minutes.Wipe the potatoes with a clean cloth and deep fry.French fries are ready.As said earlier, you may add the seasoning masala according to the palatal preferences or just dust it with some white pepper powder.

>thanx Babble for dropping in....from what I have heard they put the potatoes into ice cold water to prevent it from turning the colour to black on exposure to air...any idea???

Cold water also helps remove some excess starch i believe
