Vellarikka Pulingurry
Vellarikka pulingurry is a very common vegetarian curry in the northern parts of Kerala.Vellarikka can be substituted by a large no of vegetables like okra, brinjal,etc.
Ingredients
Vellarikka/Dosakkai/Indian cucumber)-1 small diced
chilli powder-2 tsp
turmeric powder-1/2 tsp
coconut grated-1/2 coconut(100g)
cumin seed-1tsp
Methi seeds-1/2 tsp
Dry red chillies-3(cut into small pieces)
Curry leaves-A sprig
tamarind paste-1tsp
salt & water -as required
Method
Dice the vellarikka(Indian cucumber) into small pieces.Add a tea spoon of chillipowder,a pinch of salt, 1 cup water and pressure cook it for 7minutes(2 whistles).
Grind Coconut along with jeera,a pinch of turmeric powder into a very fine paste.Now add the coconut paste to the cooked vellarikka.Add 1tsp tamarind paste and salt and mix everything well.Add water if required.Now allow it to boil for another 5 minutes. For seasoning take 1tbsp oil in a small kadai and heat. Add mustard seeds,fenugreek seeds(methi),cumin seeds,dry red chillies, & curry leaves and once they have spluttered add the seasoning to the curry and stir well. It goes well with rice.
