Sabji Hariyali





Sabji Hariyali is a green vegetable stir fry....vegtables packed with a lot of vitamins and essential nutrients-Broccoli, Cauliflower, green peas and some Spring onion.Broccoli,Italian in origin, is rich in Vitamin A, Vitamin C, Vitamin B-1 (thiamin), calcium, and potassium.     (Serves-2)
    Cauliflower-5 florets
    Broccoli-5 florets
    Green Peas-100g
    Spring onion-100g
    Green chilli-3
    Dry Red chilli-2
    Turmeric-1 pinch
    Cumin seed-1/2 tsp
    Mustard-1/2 tsp
    Sesame seed-1 tsp
    Curry leaves-1 sprig
    Salt-as required
    Oil- As required
    Method

    Soak the green peas in water for 10 minutes(for oriental green peas you need to soak it longer). Clean and cut the vegetables. Heat oil in a wok.Add mustard seeds, cumin seeds, sesame, green chilli, dry red chilli ,and curry leaves. Once they have spluttered add peas, broccoli,& cauliflower,a pinch of turmeric and salt. Stir it well. Add half cup water.Cover the vessel and cook it for 5 minutes. Finally add spring onion and cook it for another 2 or 3 minutes. Serve hot with Chappathi or as a side dish with rice.
