Vankaya Batata Fry

 
Vankaya batata fry is one of the tastiest Brinjal-Potato side dishes which go with a host of dishes like most of the rice items and with chappathis and parathas.Here goes the recipe for it:

Ingredients:
Brinjal-4(Medium size),sliced medium thin
Baby Potato-5,sliced medium thin
Red chilli powder-1 tsp
pepper powder-1/2 tsp
Turmeric powder-1/4 tsp
Fenugreek seed powder-1/4 tsp
Asafoetida-a pinch
Garlic-4(Unpeeled,pounded)
Oil-2 tbsp
Curry leaves-1 sprig
Salt-as required

Method

Heat 1tsp oil in a wok.Roast red chilli powder,turmeric powder,fenugreek seed powder,asafoetida,and pounded garlic on slow fire for a couple of minutes.Now marinate the chopped potato and brinjal with this masala and salt and keep it aside for 10 minutes. Now heat 1 1/2 tbsp oil in a wok.Add curry leaves and then roast the marinated brinjal and potato till it becomes brown in colour.Finally add pepper powder. Mix well.Roast it for a couple of minutes more...Serve it hot as a side dish for Rice/Chappathis.

I used to fry potatoes with just chilli powder and salt,and I tried your version yesterday and it is mindblowing,easy to make as well.
